In the last few years, Stephen and I have spent weeks and months in a medieval French village. The village is located in the rolling pastureland of central France. Since medieval times, there have been weekly markets in the village squares. The local artisans bring their produce and meats to the market so the theory of "farm to table" is a way of life and eagerly embraced by the locals. Your menu varies according to the seasonal produce.
We discovered that the simple preparation of fresh produce results in delicious meals. These two recipes certainly represent the country and countryside. Bon appetit!
